Low Fat Amaretto Sesame Seed Cookies


There's nothing like the taste of amaretto in a cookie!

Prep time: 20 min; Total time: 40 min

Ingredients

Preheat the oven to 350 F. Begin mixing applesauce, amaretto, and maple syrup or sugars together. Add salt, flour, baking soda, and baking powder. Mix together until "just mixed."

Roll 2 tbsp. globs of cookie dough into balls, then press them between your hands or use the back of a spoon to flatten them a bit, and dip them in sesame seeds to coat them thoroughly. Place each glob of sesame-coated dough on an ungreased cookie sheet.

Bake for 11-13 minutes.

Makes 20 cookies.

Tips
You can substitute up to 1/3 c. organic soy flour instead of whole wheat flour to add protein.

To make these cookies wheat-free, substitute oat flour instead of wheat flour.

If you want your cookies to spread out more in the oven, add 2 tbsp. organic canola oil or replace all applesauce with organic canola oil. Be aware your cookies will not be low fat if you do so.

Use a small ice cream scoop to scoop your cookies onto the cookie sheet. This way, all of your cookies will be the same size so they will finish baking at the same time.

If you want, you can substitute crushed almonds (or other types of nuts) for sesame seeds. Also, you can mix the nuts or seeds in with the cookie dough instead of coating the outside of the dough.

Grade B maple syrup has more flavor and more nutrients than Grade A - plus, it's cheaper! You can also use raw unfiltered honey instead of maple syrup if you'd like.

Try using other flavors or liqueurs instead of amaretto. These cookies taste great with Cointreau.

Instead of baking these cookies, just snack on the cookie dough. It will turn your chocolate ice cream or frozen yogurt into chocolate-covered cherry ice cream.
