Vegan Cream Cheese Frosting
Cream cheese frosting is a must if you are making carrot cake or apple spice cake. Vegan cream cheese frosting sounds like a contradiction in terms, but if you use soy based cream cheese, it comes out just fine.
Non-vegans, follow the recipe but use regular cream cheese.

Ingredients
- 1 8 oz. package cream cheese or vegan cream cheese
- 1/4 c. milk or soy milk (or less if you prefer thicker frosting)
- 2 tbsp. butter or Earth Balance
- 3/4 c. powdered sugar
Combine all ingredients in a food processor or blender. Blend until smooth.
Tips
If you have stevia, substitute 1 tsp. (or less) stevia for the powdered sugar.
I've tasted vegan cream cheese frosting made with Tofutti brand cream cheese and it tasted more like the "real thing" than other vegan cream cheese brands I've tried. However, any brand vegan cream cheese will do. Even if they taste less like actual cream cheese, they still taste good. Anything with 3/4 c. powdered sugar tastes good.
