Apple Walnut Charoset
Simple charoset recipes can be found from all over the world. Here is the one that is passed down through my family.
This vegetarian Jewish dish is traditionally made at Passover, but my friends like it so much that I serve it as an hors d'ouvre at parties year round.

Ingredients
- 6 peeled apples, coarsely chopped
- 2/3 c. chopped walnuts
- 3 tbsp sugar or honey, or to taste
- 1/2 tsp cinnamon
- Juice of 1/2 lemon - just enough to keep the apple from turning brown
- 4 tbsp sweet red wine
- 1/2 c. raisins
- Matzoh or crackers
Combine all, mixing thoroughly. Add wine as needed. Blend to a course, crunchy texture. Chill. Serve with matzoh or crackers.
Tips
The apples should be chopped into 1/4" to 1/2" cubes. To save time and add nutrition, do not peel
the apples.
If you want to make your charoset "authentic," use Mogen David kosher wine. It is terrible wine for drinking, so consider yourself warned before you invest in a bottle. Any red wine will taste just fine in this charoset recipe so you may prefer to buy a wine you like and then you can drink while you cook.
Vary this recipe by adding cardamom, cloves, cayenne, ginger, dried coconut, dates, prunes, dried apricots, oranges, almonds, pine nuts, sesame seeds, bananas, or whatever else you have around the house.
