Fruit Curry
Simple vegetarian recipes like this fruit curry with mango, banana, and apple make my mouth water just thinking about them! My friend Jonny came up with this idea one night and it was delicious. If your bananas are ripe enough, they will practically dissolve into the coconut curry sauce, making it incredibly sweet.
I revised the recipe a bit to reduce the fat content.

Ingredients
- 2 tbsp. organic non-GMO canola oil
- 6 oz. low fat coconut milk
- 6 oz. vegetable broth
- Generous helping curry powder or paste
- 1 Onion, sliced
- 1 Apple, sliced
- 1 Mango, sliced
- 1 Banana, sliced
In a large saucepan, sweat the onions at a high heat until translucent. Add all remaining ingredients. Stir fry until it smells delicious. Eat. Go get seconds. And thirds. Then loosen your belt.

Tips
Coconut milk contains saturated fat - but it tastes really good. If you wish, use a whole can of
lite coconut milk (an additional 2.7g fat per serving) or use regular coconut milk (60% more fat
per serving). If you try this, do not add broth initially. Once you've added all ingredients, add
broth to taste if you wish. Your curry will taste better :)
Serve this simple vegetarian recipe with rice. Begin cooking the rice before you start making the curry - particularly if you are using brown or wild rice as they take a while to cook.
Try adding other exotic fruits such as papayas, dates, pineapple, and passionfruit.
Consider changing the flavor of this dish with vanilla extract, citrus zest, cinnamon, cardamom, or grated ginger.
