Low Fat Apple Cinnamon Muffins
Try these low fat muffins - they are just sweet enough, with chunks of apples. And, they are low calorie, vegan, and healthy!

Ingredients
- 3 c. spelt flour or whole wheat flour
- 1 tsp. salt
- 4 tsp. baking powder
- 2 tsp. cinnamon
- 1/4 c. blackstrap molasses
- 1/4 c. maple syrup, Grade B
- 1 1/2 c. applesauce
- 1 c. organic soy milk
- 4 apples, peeled, cored, and cubed
Begin by mixing dry ingredients (flour, salt, baking powder, and cinnamon). Then add the wet ingredients (molasses, maple syrup, applesauce, and soy milk) and mix them until they are "just mixed."
At this point, preheat the oven to 400F. Then begin peeling and cutting the apples. Fold the apples into the muffin batter - do not mix any more than necessary.
Spoon the muffin batter into a muffin tin (greased or lined with muffin cups), filling each cup completely full. Bake at 400F for 25 minutes until a toothpick inserted into a muffin comes out clean.
Makes 20 muffins.

Tips
To make your muffins more cinnamony, use cinnamon applesauce. You can also add
other spices such as nutmeg, allspice, cloves, or cardamom.
Try mixing in other fruits, such as raisins or grated orange peel. If you do this, you may wish to reduce the number of apples from 4 to 3.
Grade B maple syrup is rich in nutrients and full in flavor. It is cheaper than Grade A and it is the best choice for baking.
