Strawberry Lime Sorbet
Instead of buying strawberry sorbet that is full of high fructose corn syrup, make your own strawberry lime sorbet with fresh, organic ingredients.

Ingredients
- 1 tbsp. Cointreau
- 1 tbsp. lime juice
- 1/4 c. lime zest (grated lime peel)
- 1/4 c. maple syrup, Grade B (or less, to taste)
- 1/4 c. water
- 3 c. frozen strawberries
First, grate the lime zest.
Once you have enough lime zest, combine all ingredients in a blender and blend. The consistency should be slightly too thick for a smoothie and slightly too runny for a sorbet. If your blender jams up, stop the blender and stir the contents around a bit to loosen them up. You may have to do this a couple times.
Then, freeze your sorbet in a covered container until it's time to eat!

Tips
If you do not have limes handy, just make a strawberry sorbet. Replace lime juice
with orange juice and omit lime zest. You might find it a bit too sweet so you can reduce the maple
syrup by half and increase the water to 1/3 c. if you want.
Optionally, garnish the sorbet with fresh berries, a sprig of fresh mint, and homemade whipped cream. My favorite San Diego restaurant serves their sorbet this way, and I think their whipped cream has a secret ingredient of coconut.
To make chocolate strawberry sorbet, follow the instructions above to make strawberry sorbet and then add a ribbon of chocolate liqueur.
If you wish to make your sorbet strawberry-orange, replace lime juice with orange juice and lime zest with orange zest.
You can also make this recipe with an ice cream machine. Use fresh strawberries instead of frozen and then follow the instructions of your ice cream maker.
To grate the lime peel, use a microplane if you have one. You can also use a cheese grater, but a microplane is infinitely more user-friendly.
You will need a few limes to come up with 1/4 c. of zest. There are several other recipes on this site calling for lime juice so you may wish to plan a dinner of cilantro lime sweet potatoes or cilantro lime pintos and rice to use the juice of your limes. You can also sprinkle chili powder on corn on the cob and squeeze a lime over it for a delicious, healthy, summery side dish.
Go ahead and substitute raspberries, blackberries, or blueberries for some or all of the strawberries. Each berry ripens at a different time during the summer, so you can choose in season berries all summer long (or freeze them in the summer and use them later).
