French Dill Potato Salad
Try serving this French dill potato salad on Easter, the Fourth of July, or at a picnic. Because it requires no mayonnaise, it carries no risk of spoiling in your picnic basket - and it's healthier than traditional potato salad.

Ingredients
- 6-8 red potatoes, cooked
- 1 small red onion, chopped (optional)
- 1/4 c. vegetable broth
- 2 tbsp. white wine vinegar
- 1 tbsp. extra virgin olive oil
- 1 tsp. brown or dijon mustard
- 1 tbsp. dried dill or 1/4 c. fresh dill
- Salt and pepper to taste
Begin by cooking the potatoes until they are soft enough to stick a fork into. Chop the potatoes into bitesize pieces and place them in a bowl.
Next, chop the onion into small pieces and toss them into the bowl with the potatoes.
Last, create your dressing. Combine broth, vinegar, oil, mustard, and dill and mix until blended well. Toss the potatoes and onions in the dressing. Season with salt and pepper.
Refrigerate in a covered container for several hours or overnight.
Tips
You can substitute green onions or chives instead of red onions if you would like.
Try adding other herbs - tarragon and parsley would taste delicious in this salad.
If you wish, add cooked green beans to this salad.
