Low Fat Wild Mushroom Pizza


I made this low fat wild mushroom pizza for a party and my friends all loved it. It's an easy recipe to follow with a great taste.

Each type of mushroom brings a different flavor to the pizza - as well as different nutrients. Use a mix of your favorite mushrooms to make this a healthy vegan treat.

Ingredients

Any pizza tastes best if it is made with a pizza stone. If you have one, place it on the bottom of your oven (or on the bottom rack if the bottom has coils) and heat it to 450 F for 15 minutes. During this time, assemble your pizza.

Begin with your crust. I make my own crust so at this stage it is still raw dough - you may need to adjust your recipe accordingly if you use a ready-made crust (the package should have instructions).

Next, coat the pizza thickly with marinar sauce.

Last, slice mushrooms into thin piece and sprinkle them over the top of the pizza. You can use any type of mushrooms - I prefer shiitake and oyster mushrooms from the local farmer's market.

Bake on the pizza stone for 12-15 minutes at 450 F.

Tips
Thyme always tastes great with mushrooms. I also like dried lavender flowers and red pepper flakes. Sprinkle these herbs over the pizza or mix them in with the dough or the sauce.

Use a mix of wild mushrooms. Shiitake have a woodsy flavor, porcini have a smoky flavor, oyster have a buttery flavor, and chanterelles have a nutty flavor. I used shiitake and oyster, but I think porcini would be great on pizza. Portabellas or cremini are also a widely available favorite.

If you use dried mushrooms, reconstitute them in water before you use them.

If you are not vegan, you can add some cheese. I feel like it detracts from the naturally delicious flavor of the pizza, but it's all individual taste. To some, it isn't pizza if it doesn't have cheese. Try experimenting with various types of cheese.

Add other veggies to your pizza if you wish - I like adding diced onions and drizzling extra virgin olive oil over the top.
