Simple vegetarian recipes for soup provide the ideal comfort food. I grew up in Chicago, where they say we have two seasons - winter and August. Naturally, we eat a lot of soup.

Vegetarian soup recipes provide the perfect framework for creativity. Most soups begin the same: saute your aromatics (onions, garlic, and other veggies such as celery or carrots if you have them on hand) and then add broth. From there, your imagination is the limit. Add vegetables, legumes, tofu, miso, vinegar, grains, pasta, herbs, and spices - even peanut butter. It's hard to go wrong!
