Vietnamese Style Dumpling Soup


Vegetarian Vietnamese recipes are easy to prepare - and delicious! I love the fresh, simple flavors in this Vietnamese-style dumpling soup.

Ingredients

In a stainless steel or enamel saucepan, bring the broth and the dumplings to a boil. About 4-6 dumplings per person will make this a filling meal. Stir occasionally to keep the dumplings from sticking to the bottom of the pan. Boil the dumplings for about 5-7 minutes, then lower heat and serve.

While dumplings are boiling, place the garnishes (greens, cilantro, peppers, and bean sprouts) on a plate. Cut the lime into eight pieces and add it to the plate.

Serve your soup with the plate of garnishes (just like at a Vietnamese restaurant). Every person can add garnishes they like to their soup.

Tips
Try adding the pepper to your broth while the soup cooks. This will give your broth a little kick.

Try different kinds of greens. I've used dandelion greens, spinach, escarole, and kale. They may not be authentic ingredients of vegetarian Vietnamese recipes, but they are all extremely delicious and healthy!
