Indian Lentil Dal Soup
Mustard greens have a slight horseradish flavor. I like to make them with soy sauce, mirin, and rice vinegar to give them an Asian flair.

Ingredients
- 1 bunch mustard greens
- 2 tbsp. soy sauce or tamari
- 1 tbsp. mirin
- 1 tbsp. rice vinegar
Rinse mustard greens and place them in a saucepan over medium low heat. Stir occasionally.
After 20 minutes, the greens should be wilted. Add soy sauce, mirin, and rice vinegar. Serve.
Tips
Substitute other types of greens - kale, collard greens, bok choy, or spinach,
for example.
Cook the greens with 1 inch grated fresh ginger and/or with 1-2 cloves crushed garlic.
