Cilantro Lime Sweet Potatoes


The most simple and healthy vegetarian sweet potato recipe I know of - simply nuke them, peel them, mash them, and add cilantro and lime.

These low calorie and low fat sweet potatoes aren't too sugary sweet, and they don't require butter to give them flavor. The lime gives them a pleasant "zing," complementing the sweetness of the potatoes themselves.

Prep time: 10 min; Total time: 20 min

Ingredients

Wrap the sweet potatoes in a kitchen towel and microwave them for 5-10 minutes. When you remove them from the microwave, they should be soft and the peel should be loose.

Remove the sweet potatoes from the saucepan and run them under cool water for a minute or two until you can touch them. Remove the peel and place sweet potatoes in a large mixing bowl.

Mash sweet potatoes with a fork. Squeeze in lime juice and add cilantro. Continue mashing the sweet potato with a fork until the lime and the cilantro is mixed in.
