Creole Roasted Zucchini
Creole roasted zucchini brings the flavors of paprika and coriander and a spicy cayenne kick together with delicious zucchini.

Ingredients
- 2 zucchini, sliced
- 1-2 tbsp. extra virgin olive oil
- 1 tsp. paprika
- 1 tsp. coriander
- 1/2 tsp. granulated garlic
- Salt, to taste
- 1/4 tsp. cayenne pepper (optional)
Slice zucchini. Toss with olive oil and spices. Bake on a cookie sheet or in a shallow pan at 400 F for 20 minutes.
Serves: 2
Tips
Try this recipe with other vegetables instead of zucchini. Sweet potatoes taste delicious!
If you do not have cayenne pepper around, you can substitute red pepper flakes.
Instead of garlic powder and salt, you can use garlic salt to taste.
