Sesame Spinach Salad
Eating sesame spinach salad is a delicious way to stay healthy. It's easy to make in a few minutes and it's extremely flavorful.

Ingredients
- 2-3 c. fresh spinach (or more)
- 2 tbsp. fresh squeezed lemon juice
- 1-2 tbsp. toasted sesame oil
- Soy sauce or tamari, to taste
- 1-2 tbsp. sesame seeds
Begin by steaming your spinach.
While the spinach is cooking, mix lemon juice, sesame oil, and a small amount of soy sauce. You can always add more soy sauce, but you cannot remove it.
Dress the spinach with the sesame oil mixture. Taste it and adjust the amount of soy sauce. Last, add the sesame seeds and mix them in.
Serve hot or cold.
Tips
Toast your sesame seeds to add flavor to them. Place your sesame seeds a shallow
pan and heat it on the stove over medium heat. Stir frequently to prevent sesame seeds from burning.
When you can smell a nutty aroma from the seeds, remove them from the heat.
Use different greens instead of spinach. Try kale, chard, or stinging nettles instead.
Give your spinach some bite with a small amount of grated fresh ginger (about 1/2 tsp.).
