Spinach and Ramps


The 2nd weekend in May, my CSA box included spinach and ramps. My first thought was "What's a ramp?" Ramps are onion-like vegetables with edible leaves. Once cooked, the white part gives your dish a flavor reminiscent of green onions or garlic, but the other parts tasted slightly sweet to me.

Since spinach and ramps are both perishable, I wanted to eat them first. I did not do anything complex with them, but the dish tasted great all the same.

Ingredients

Heat the olive oil over a medium heat (I used a cast iron pan). Then dice the white part parts of the ramps and heat them with the olive oil.

Cut the green parts into much larger pieces. Unless you are using baby spinach, chop up your spinach a bit too. When the white parts of the ramps are translucent, add your greens and stir fry until the greens are wilted.

Add salt or soy sauce to taste (go easy on the salt - you can always add more but you can't remove it).
