Faux Bacon Lettuce and Tomato Wrap
There's nothing like crispy faux bacon to go with mixed baby greens and fresh tomatoes in this delicious wrap. Unlike the real thing, you can actually count this fake BLT as a health food - there's superfoods like whole grains, spinach, tomatoes, and broccoli sprouts, it's low fat, and it's even relatively high in protein.

Ingredients
- 4 strips meatless bacon (Try Smart or Morningstar)
- 1 tomato
- Handful herb salad
- Handful broccoli sprouts
- Either 1 tsp. veganaise or 1 tbsp. plain yogurt mixed with a squirt of dijon mustard
- A whole wheat tortilla, two slices whole wheat bread, or a pita bread
Toast the fake bacon in the toaster oven until it is crispy. While it toasts, assemble your sandwich. Spread veganaise or yogurt/dijon mixture on your bread, wrap, or pita. Slice the tomatoes, and add them to your bread or wrap along with the salad and sprouts. When the bacon is crispy, add it to your wrap or sandwich and enjoy!

Tips
Look for an herb salad with the ready-made salads at the grocery store - they are a combination of
mixed baby greens and fresh herbs like dill, parsley, and cilantro. Paul Newman's brand makes one.
If you can't find it, get mixed baby greens and add fresh herbs if you have them on hand. I think
the fresh herbs lend a healthy flavor to this wrap.
This is a great meal to make if you dine with omnivores. Let them make theirs with real bacon or (for a low fat option) turkey bacon.
