Portobella Patty Melt
Many vegetarian burger recipes are great, but there's nothing as delicious as a patty melt. I tried making my own with a portobello mushroom, and it was completely scrumptious!

Ingredients
- 1-2 tbsp organic canola oil
- 2 tbsp vegetarian worcestershire sauce
- 2 tbsp vegetable broth
- Onion, sliced
- 1 portobello mushroom per person
- 2 slices rye or pumpernickel bread per person
- 1-2 slices Swiss cheese or vegan cheez per person
Slice the onion and saute with oil on medium heat in a cast iron pan. Add the mushroom and worcestershire sauce to the same pan and cook until the onions are translucent and the mushroom is cooked through. Add a few tablespoons of vegetable broth to keep the onions and mushroom from sticking to the pan.
When the mushroom and onions are about done, toast two slices in the toaster with cheese or cheez. Pile on the onions and mushroom, make a sandwich, and open your mouth REALLY wide to eat it!
Tips
In the summer, make this on the grill! Vegetarian burger recipes are great for grilling holidays
like the Fourth of July.
If you are dining with omnivores and vegetarians and/or vegans together, make burgers with portobella mushrooms for the vegetarians and make burgers with ground beef for the omnivores.
Add whole black pepper kernals to the pan when you saute the onion to add some spice.
Instead of cheese, try using mayonaise or veganaise mixed with a tiny bit of horseradish.
